Instructions
- In a large mixing bowl, cream together the softened salted butter, granulated sugar, light brown sugar, honey, and orange zest using a rubber spatula until the mixture is light and fluffy.
- Stir in the room-temperature egg and vanilla extract until fully combined, then mix in the finely ground pistachios and let the batter rest for 5 minutes.
- In a separate medium bowl, whisk together the flour, baking soda, baking powder, ground cardamom, and salt.
- Gently fold the dry ingredients into the butter mixture until just incorporated, then cover and refrigerate the dough for 1 to 2 hours.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Prepare the coating by rubbing the sugar and orange zest together in a small bowl, then stirring in the cinnamon and cardamom.
- Scoop the chilled dough into balls, roll each in the spiced sugar coating, and place on the prepared sheets about three inches apart.
