Ingredients

  • 1 cup salted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon honey
  • 1 tablespoon fresh orange zest
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup roasted and salted pistachios, finely ground
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar (for coating)
  • 1 teaspoon orange zest (for coating)
  • 1/2 teaspoon ground cinnamon (for coating)
  • 1/2 teaspoon ground cardamom (for coating)
  • Additional chopped pistachios for topping


Instructions

  1. In a large mixing bowl, cream together the softened salted butter, granulated sugar, light brown sugar, honey, and orange zest using a rubber spatula until the mixture is light and fluffy.
  2. Stir in the room-temperature egg and vanilla extract until fully combined, then mix in the finely ground pistachios and let the batter rest for 5 minutes.
  3. In a separate medium bowl, whisk together the flour, baking soda, baking powder, ground cardamom, and salt.
  4. Gently fold the dry ingredients into the butter mixture until just incorporated, then cover and refrigerate the dough for 1 to 2 hours.
  5. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Prepare the coating by rubbing the sugar and orange zest together in a small bowl, then stirring in the cinnamon and cardamom.
  7. Scoop the chilled dough into balls, roll each in the spiced sugar coating, and place on the prepared sheets about three inches apart.
  8. Press down slightly if a thinner cookie is desired, sprinkle with extra pistachios, and bake for 11 to 13 minutes until the edges are golden.
  9. Cool on the baking sheet for one minute before transferring the cookies to a wire rack to cool completely.

Notes

For the most vibrant flavor, use high-quality green pistachios and grind them just before adding to the dough. If you prefer a more pronounced citrus flavor, you can add an extra half-teaspoon of orange zest to the dough without affecting the texture of the bake.
