Ingredients
- 1 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup dried cherries, finely chopped
- 1/2 cup cherry preserves
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup white chocolate chips
Instructions
- Pre-heat your oven to 350° F (175° C) and line your baking sheets with parchment paper.
- In a large mixing bowl, cream together the room-temperature butter and sugar until the mixture is light and fluffy.
- Gently blend in the egg and the pure vanilla extract until the mixture is smooth and fully combined.
- In a separate bowl, sift together the all-purpose flour, baking powder, and salt.
- Slowly add the dry ingredients to the butter mixture, then fold in the finely chopped dried cherries until just blended.
- Scoop rounded teaspoonfuls of dough and place them on the prepared baking sheets, spaced about two inches apart.
- Bake for 10-12 minutes until the edges are just barely golden, then remove from the oven.
- While cookies bake, heat cherry preserves in a microwave-safe bowl for about one minute until fluid.
- Blend the warm preserves with an immersion blender or fork until smooth and free of large fruit chunks.
- Stir the semi-sweet chocolate chips into the hot preserves until the chocolate is melted and the mixture is glossy.
- While the cookies are still hot, use the back of a small spoon to gently press a shallow well into the center of each cookie, then transfer to a wire rack.
- Spoon the chocolate-cherry mixture into the wells of each cooled cookie.
- Melt the white chocolate chips using a double boiler or gentle heat until smooth.
- Drizzle the melted white chocolate over the filled cookies and allow them to set completely before serving.
Notes
To achieve the best texture, ensure your dried cherries are chopped very fine so they distribute evenly without breaking the cookie’s structure. If the chocolate-cherry filling begins to thicken too much while filling the cookies, a quick five-second burst in the microwave will return it to a spoonable consistency.
