Ingredients

  • 2 large eggs
  • 1 tablespoon pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3 cups old-fashioned rolled oats
  • 1 cup chocolate chips or chopped nuts (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar for 2 to 3 minutes until creamy and pale.
  3. Add the eggs one at a time, ensuring each is fully incorporated before adding the next, then stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the flour, baking soda, salt, cinnamon, and rolled oats.
  5. Pour the dry ingredients into the butter mixture and mix on a low setting just until the flour streaks disappear; fold in chocolate chips or nuts if using.
  6. Scoop the dough onto the prepared pans and bake for 8 to 12 minutes until the edges are golden brown. Let rest on the pan for 5 minutes before transferring to a wire rack to cool completely.
