Ingredients

Instructions
- In a large mixing bowl, cream the softened butter with both the brown and granulated sugars on medium speed for about three minutes until smooth and pale.
- Add the eggs one at a time, beating on high speed for one minute until fluffy, then scrape the bowl and stir in the vanilla extract and molasses.
- In a separate smaller bowl, whisk together the flour, baking soda, cinnamon, and salt until evenly distributed.
- Gradually add the flour mixture to the wet ingredients, mixing on low speed just until the white streaks disappear.
- Gently beat in the old-fashioned oats, raisins, and walnuts on low speed until combined into a thick, sticky dough.
- Cover the bowl and refrigerate for 30 to 60 minutes to help the flavors meld and prevent the cookies from spreading.
- Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
- Roll approximately two tablespoons of dough into balls, place them two inches apart on the sheets, and bake for 12 to 14 minutes.
- Allow the cookies to rest on the hot baking sheet for five minutes to set before moving them to a wire rack to cool completely.
Notes
To ensure your cookies remain soft for days, pull them out of the oven when the centers still look slightly under-baked; the residual heat from the pan will finish the process perfectly.
