Ingredients

  • 222g salted butter, softened
  • 230g granulated sugar
  • 456g all-purpose flour
  • 2 tsp baking powder
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 321g powdered sugar
  • 1/2 cup salted butter, softened
  • 2-3 tbsp milk
  • 2 drops pink food coloring


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a stand mixer, cream the 222g softened butter and granulated sugar for 2-3 minutes until the mixture is light and fluffy.
  3. Incorporate the eggs one at a time, then stir in the vanilla and almond extracts until well combined.
  4. Add the all-purpose flour and baking powder to the bowl and mix on low speed until just combined, being careful not to overmix.
  5. Portion the dough using a 1/3 cup scoop and place the rounds on the prepared baking sheet.
  6. Flatten each dough ball slightly with the palm of your hand to create a thick, even disc.
  7. Bake for 11 to 13 minutes, removing them from the oven as soon as the centers lose their gloss but before the edges turn brown.
  8. Allow the cookies to cool completely on the baking sheet to set their dense structure.
  9. Prepare the frosting by beating 1/2 cup butter with powdered sugar, almond extract, milk, and food coloring until creamy.
  10. Spread a generous layer of icing on each cooled cookie and refrigerate for at least one hour before serving.

Notes

For the best results, use a digital kitchen scale to measure the flour and sugar accurately. If your frosting is too stiff, add milk one teaspoon at a time until it reaches a spreadable consistency.
