Description

Experience the timeless charm of traditional shortbread with this streamlined food processor recipe. It yields a perfectly crumbly, melt-in-your-mouth texture using just a few pantry staples, making it a quick yet sophisticated addition to your tea time.

Ingredients

  • 1 cup unsalted butter, softened to room temperature
  • 2 cups all-purpose flour
  • 1/2 cup caster sugar
  • 1 pinch salt
  • Extra sugar for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease an 8×8 or 9×9 inch square baking pan.
  2. Combine the flour, softened butter, caster sugar, and salt in a food processor and pulse until the mixture resembles coarse breadcrumbs that clump together when pinched.
  3. Transfer the dough into the prepared pan and press it down firmly into an even layer, ensuring it reaches all the corners.
  4. Prick the surface of the dough all over with a fork to allow steam to escape and create the classic shortbread aesthetic.
  5. Bake on the middle rack for 30 to 35 minutes until the shortbread is firm and a pale golden color.
  6. Remove from the oven and immediately sprinkle with extra sugar; slice into fingers while still warm and let cool completely in the pan.

Notes

For the best results, use a high-quality European-style butter as it provides a richer flavor and better texture. If you do not have caster sugar, you can pulse regular granulated sugar in a blender for a few seconds until it reaches a superfine consistency. Always wait until the shortbread is completely cold before removing it from the pan to prevent the delicate fingers from breaking.
