Instructions

- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, pumpkin pie spice, and cinnamon.
- In a large mixing bowl, whisk the cooled brown butter and dark brown sugar until it reaches a sandy consistency.
- Whisk in the egg yolk, maple syrup, vanilla, and pumpkin puree until the mixture is smooth and shiny.
- Gently fold the dry ingredients into the wet mixture using a rubber spatula just until no flour streaks remain.
- Combine the coating sugar and cinnamon in a small bowl; scoop dough into balls and roll thoroughly in the cinnamon-sugar mixture.
- Place on a parchment-lined baking sheet 3 inches apart and bake at 350°F for 12 to 15 minutes until edges are set.

For an even chewier texture, you can blot your pumpkin puree with a paper towel to remove excess moisture before adding it to the batter.
