Ingredients

  • 1/2 cup softened butter
  • 1/2 cup granulated white sugar
  • 1/2 cup chunky peanut butter
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup rolled oats
  • 1/2 cup smooth peanut butter
  • 1/2 cup powdered sugar


Instructions

  1. Cream the softened butter and granulated sugar in a medium bowl until light and airy.
  2. Incorporate the chunky peanut butter, room-temperature egg, vanilla, and salt until the mixture is completely smooth.
  3. Whisk together the flour, baking soda, and oats in a separate bowl, then slowly fold into the wet ingredients until just combined.
  4. Roll the dough to a 1/4-inch thickness on a floured surface and cut into 1-inch circles.
