Description

Ingredients

  • 1 cup plus 1/4 cup natural peanut butter, divided
  • 1/2 cup coconut sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup rolled oats
  • 1/2 cup plus 1 tablespoon oat flour, divided
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 2 tablespoons maple syrup


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, gently stir together 1 cup of natural peanut butter, the coconut sugar, and the egg until smooth.
  3. Pour in the vanilla extract, rolled oats, 1/2 cup of oat flour, baking soda, and sea salt, stirring until a thick dough forms.
  4. Using a half-tablespoon measure, scoop the dough and roll into small balls.
  5. Place the balls on a baking sheet and gently press down with your fingers or a fork.
  6. Bake for 8 to 10 minutes until the bottoms are lightly golden.
  7. Allow the cookies to rest on the sheet for 5 minutes before moving them to a wire rack to cool completely.
  8. Prepare the filling by mixing the remaining 1/4 cup peanut butter, maple syrup, and 1 tablespoon of oat flour in a small bowl.
  9. Spread a spoonful of filling onto the bottom of one cooled cookie and press another on top to create a sandwich.
