Description

Experience the ultimate cookie texture with this recipe that pairs the deep, nutty aroma of browned butter with a blend of sweet raisins and tart cranberries. Designed to stay soft and pliable for days, these cookies are a refined version of a classic comfort treat.

Ingredients

  • 1 cup unsalted butter
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 tablespoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups old fashioned oats
  • 1/2 cup golden raisins
  • 1/2 cup regular raisins
  • 1/2 cup dried cranberries

Instructions

  1. Brown the butter in a pan over medium heat until it turns golden and smells nutty, then transfer to a large bowl to cool slightly.
  2. Whisk the brown sugar and granulated sugar into the cooled butter until the mixture resembles wet sand, then stir in the egg, egg yolk, and vanilla until glossy.
  3. In a separate bowl, combine the flour, oats, cinnamon, nutmeg, baking soda, and salt, then stir in the raisins and cranberries to coat them in flour.
  4. Gradually fold the dry ingredients into the wet batter until just combined, ensuring you do not overmix.
  5. Cover the dough and refrigerate for at least 30 minutes to allow the flavors to develop and the butter to firm up.
  6. Preheat oven to 350°F (175°C) and scoop 2-tablespoon portions of dough onto parchment-lined baking sheets, spacing them 2 inches apart.
  7. Bake for 13 minutes or until edges are golden brown, then let cool on the sheet to set the soft centers.

Notes

When browning the butter, keep a close eye on the pan as it can transition from nutty to burnt very quickly; as soon as you see dark golden specks, remove it from the heat. For the softest results, use a high-quality honey-gold raisin and ensure your baking soda is fresh to provide just the right amount of lift.
