These decadent treats hide a crunchy sandwich cookie inside a soft, buttery chocolate chip exterior for a delightful surprise. Perfect for sharing or filling the family cookie jar, they combine two classic flavors into one substantial, honey-gold bake.
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup light brown sugar, packed
- 1 cup granulated sugar
- 2 large eggs
- 1 tablespoon pure vanilla extract
- 3 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 10 oz semi-sweet chocolate chips
- 1 package Oreo cookies (Double Stuffed recommended)
Instructions
- Preheat your oven to 350°F (175°C) and line heavy baking sheets with parchment paper.
- Cream the softened butter, brown sugar, and granulated sugar in a large bowl until the mixture is light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract until smooth.
- In a separate bowl, whisk together the flour, baking soda, and salt, then gradually mix into the wet ingredients on low speed.
- Gently fold in the chocolate chips by hand using a wooden spoon.
- Place a scoop of dough on top and bottom of each Oreo cookie, then press the edges together to completely seal the sandwich cookie inside.
- Arrange on prepared baking sheets and bake for 9 to 13 minutes until the edges are golden but centers remain soft.
- Let the cookies rest on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For the best results, ensure your butter is at room temperature but still firm enough to hold its shape; this prevents the cookies from spreading too thin and exposing the Oreo center. If you want a perfectly round shape, use a large cookie scoop to measure even portions of dough for the top and bottom of each sandwich cookie.
