Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium-sized bowl, whisk together the all-purpose flour, baking powder, and fine sea salt.
- In a large bowl or stand mixer, beat the softened butter and 1 1/4 cups of granulated sugar for 2 to 3 minutes until the mixture is light and fluffy.
- Incorporate the whole egg, extra egg yolk, and vanilla extract, beating until well combined and scraping down the bowl.
- Turn the mixer to the lowest setting and slowly add the dry ingredients, mixing only until the flour just disappears.
- Portion the dough using a large cookie scoop (3 tablespoons) and roll into smooth balls.
- Roll the dough balls in the 1/4 cup of sugar until coated, then place on baking sheets 2 inches apart.
