Description
These decadent cookies blend the nutty, savory depth of tahini with classic chocolate chips for a sophisticated twist on a childhood favorite. Perfectly chewy and rich, they are a modern take on a vintage recipe that’s surprisingly easy to bake.
Ingredients
- Tahini (well-stirred)
- Unsalted butter (room temperature)
- Cane sugar
- Light brown sugar
- 1 large egg
- 1 extra egg yolk
- Vanilla extract
- All-purpose flour
- Baking soda
- Sea salt
- 2 cups chocolate chips
Instructions
- In the bowl of a stand mixer, beat the butter, tahini, cane sugar, and light brown sugar on medium speed for 2 to 3 minutes until light and fluffy.
- Add the large egg, extra egg yolk, and vanilla extract; beat for 1 to 2 minutes until fully incorporated and smooth.
- In a separate small mixing bowl, whisk together the all-purpose flour, baking soda, and sea salt.
- With the mixer on low speed, add the dry ingredients until just combined, then gently fold in the chocolate chips by hand using a spatula.
- Cover and refrigerate the dough for at least 2 hours, or ideally overnight for deeper flavor development.
- Preheat your oven to 325°F (163°C) and line pans with parchment paper. Drop 1.5 tablespoon-sized balls onto the sheets and bake for 12-15 minutes until edges are golden.
Notes
To ensure the best texture, don’t skip the chilling step; it allows the flour to fully hydrate and the flavors to meld. If you find your tahini has separated in the jar, give it a vigorous stir or a quick pulse in the blender before measuring to ensure a uniform consistency in your cookie dough.
