Ingredients

  • Tahini (well-stirred)
  • Unsalted butter (room temperature)
  • Cane sugar
  • Light brown sugar
  • 1 large egg
  • 1 extra egg yolk
  • Vanilla extract
  • All-purpose flour
  • Baking soda
  • Sea salt
  • 2 cups chocolate chips


Instructions

  1. In the bowl of a stand mixer, beat the butter, tahini, cane sugar, and light brown sugar on medium speed for 2 to 3 minutes until light and fluffy.
  2. Add the large egg, extra egg yolk, and vanilla extract; beat for 1 to 2 minutes until fully incorporated and smooth.
  3. In a separate small mixing bowl, whisk together the all-purpose flour, baking soda, and sea salt.
  4. With the mixer on low speed, add the dry ingredients until just combined, then gently fold in the chocolate chips by hand using a spatula.
  5. Cover and refrigerate the dough for at least 2 hours, or ideally overnight for deeper flavor development.
  6. Preheat your oven to 325°F (163°C) and line pans with parchment paper. Drop 1.5 tablespoon-sized balls onto the sheets and bake for 12-15 minutes until edges are golden.
