Ingredients
- 1/2 cup unsalted butter, room temperature
- 1/2 cup vegetable oil
- 1/2 cup granulated sugar (plus 1/4 cup for rolling)
- 1/2 cup powdered sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1 chai tea bag (contents only)
- 1 1/2 cups powdered sugar (for icing)
- 1/4 cup melted butter (for icing)
- 3 tablespoons eggnog or whole milk (for icing)
Instructions
- In a stand mixer, cream together the softened butter, vegetable oil, 1/2 cup granulated sugar, and powdered sugar for at least two minutes until pale and fluffy.
- Turn the mixer to low speed and add the egg and vanilla extract, beating until just combined and smooth.
- In a separate medium bowl, whisk together the flour, baking soda, chai tea spices, and salt.
- Gradually add the flour mixture to the stand mixer, beating just until the flour streaks disappear.
- Cover the bowl tightly with plastic wrap and refrigerate the dough for at least one hour.
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Roll heaping tablespoon-sized portions of dough into smooth balls, then roll each ball in the remaining 1/4 cup of granulated sugar.
- Place the balls on the sheets two inches apart and bake for 9 to 12 minutes until the edges are set.
- Allow the cookies to cool completely on the sheets before drizzling with the whisked icing ingredients.
Notes
For the most consistent bake, use a light-colored baking sheet to prevent the bottoms of these delicate cookies from browning too quickly. Ensure your butter is properly softened at room temperature before starting to achieve the ideal airy texture during the creaming process.
