Ingredients

  • 1 cup unsalted butter
  • 1 1/4 cups brown sugar
  • 1 large egg plus 2 egg yolks
  • 2 teaspoons pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 ounces dark chocolate bars, chopped
  • 3/4 cup shelled pistachios
  • 1/2 cup pistachio cream
  • Sea salt for sprinkling


Instructions

  1. Preheat your oven to 375°F (190°C) and line heavy baking sheets with parchment paper.
  2. Melt the butter in a medium saucepan over medium heat, swirling until it turns a golden amber color with brown specks, then remove from heat and cool to room temperature.
  3. In a mixing bowl, beat the cooled brown butter and brown sugar together until smooth.
  4. Add the whole egg, extra egg yolks, and vanilla extract, beating until the mixture is pale and thick.
  5. On low speed, stir in the flour, baking soda, and salt until just combined.
  6. Gently fold in the chopped pistachios and dark chocolate chunks by hand.
  7. Scoop 3-ounce balls of dough, create a well in the center, fill with a teaspoon of pistachio cream, and seal the dough around the filling.
  8. Place 6 to 8 cookies on each sheet and bake for 9 to 10 minutes until edges are golden; let cool on the sheet to set.
